Creamy And Nutritious chicken Wraps With Eggplants And Avocado!
Here is a delicious, healthy and easy recipe for a meal that will satisfy both your gourmandise and body needs!
Here is what you will need for this recipe
- 1 big Eggplant.
- Greek yogurt.
- 1 avocado.
- Chicken breast
- 1onion.
- olive oil.
- cooking oil.
- Wholemeal wraps.
- Parsley or Oregano.
- Spices: salt, black pepper, ginger, garlic powder.
How to make it
Chop your eggplant in small cubes and roast it with one big spoon of olive oil, salt pepper and garlic powder till it cooks well.
Cut the chicken breast in thin strips, cook it in a pan with the oil of your choice add to it some salt, black pepper and ginger.
N.B. for the spices, it`s always a matter of preferences, the mentioned once are the basic one you should add to your chicken)
In a bol start by mashing your avocado, add the onion cut in a small pieces and Greek yogurt (you can use yogurt with reduced fat content) and finally, do not forget to spice it up ( salt, pepper, paprika and herbs such as parsley or oregano).
Place a generous layer of the avocado mix on your wholemeal wrap and add the roasted eggplant and finally the chicken.
These wraps will deliver a burst of fibers, healthy fats, proteins and a feeling of satisfying light meal.
